Food for Thought...the Skinny on MSG

MSG could be making you sick. Learn how to recognize the symptoms.

About 30% of our population experience adverse reactions to MSG. Sometimes we don't see the symptom being MSG related because they may not show up for an hour or more after a meal while in some people, it can show up before they leave the dinner table. Most sufferers just pass it off as typical....an inconvenience they have learned to live with. Some symptoms are,migraine headache, simple headache, depression, rash, racing heart, lethargy, asthma like symptoms, nausea, vomiting, abdominal cramping, bloating, diarrhea, general weakness, gastric distress, shortness of breath, irregular heart beat, panic attacks, mood swings, flushing, tremors, poor concentration and hyperactivity in children.

Bowel complaints and IBS are probably the most common MSG induced reactions. Many people who have had their gall bladder removed complain of gall bladder attack like symptoms after eating foods containing MSG. Taurine, a free form amino acid makes bile that breaks down large fat globules which in turn makes them easier to digest. When MSG interferes with taurine's function, fat digestion becomes difficult and we end up with digestive distress.

You may not think of obesity as an MSG symptom simply because we don't feel the effects right away. I'm not saying that everyone who is over weight should blame MSG but, we are constantly hearing how obesity has more than doubled in the past fifty years and MSG's has been in use since the 1950's. Scientists fatten rats and mice to be used for experiments by injecting them with MSG. It is said that rats and mice who are injected with MSG have triple the amount of insulin in their pancrease causing them to become obese. If this is true, it is easy to see how it would affect our own bodies. Insulin is excreted from the pancrease into our bloodstream when we eat and moves the blood sugar into our cells to be burned as fuel. If there is too much insulin in the blood stream, it prevents your body from burning stored fat. In short, insulin promotes storage of fat and hinders the body's ability to lose it. Have you ever heard someone say, "I am not eating as much as I used to but I am still gaining weight"? Maybe they aren't making excuses, maybe it is what they have been eating.

If you are MSG sensitive, you have to change the way you eat and start reading labels to overcome the symptoms. Start by looking in your own kitchen cupboards and fridge. You will be surprised at what you find.

Foods contain MSG with these words on the label:

  • MSG
  • Monosodium glutamate
  • Geletine
  • Hydrolized plant protein
  • hydrolized vegetable protein
  • Glutamate
  • Autolyzed plant protein
  • Yeast extract
  • Sodium caseinate
  • Yeast food or neutrient
  • cCalcium caseinate
  • Textured protein

Foods with the following ingredients often contain MSG:

  • Malted barley
  • Caramel flavouring
  • Soy protein
  • Broth, stock or boullion
  • Whey protein
  • Pectin
  • Rice, wheat, or oat protein
  • Soy sauce
  • Products enriched or nitamine enriched
  • Flavouring or flavours
  • No fat or low fat items
  • Milk powder, dry milk solids, or protein fortified milk
  • Spice
  • Anything fermented
  • Anything containing modified enzymes

Rule of thumb: You can tell how much MSG is in a food by reading the label. The closer to the beginning of the ingredient list you find MSG, the more there is added to the food.

Foods that nearly always contain MSG:

  • Canned soups
  • Soup mixes
  • Salty snacks
  • Canned gravies
  • Many salad dressings
  • Soy sauce
  • Most fast food
  • Sausage
  • Prepared foods

The best way to help yourself is to know your symptoms. Arm yourself with information from the Internet, your library, ask questions at the Health Store and talk to your doctor. Read labels and listen to your body.

I agree. It really did make me think too. I knew that MSG is bad for you, but I didn't realize how bad it is for you.

Hi, I\'m doing research on MSG symptoms, because for the past couple of months I\'ve been experiencing headaches accompanied with high blood pressure. I\'ve never had high blood pressure problems, so this is upsetting. I have found in every episode that I have eaten some food with MSg earlier in the day or the night before. It is frightening to think of the damage that MSG may have done to my cardio vascular system. I assume that this would have the same resulting damage as untreated high blood pressure that damages your organs, blood vessels etc. Maybe this is another reason we are seeing an increase in this type of disease process. I\'ve told my husband who eats out every day, that this could be what is causing his high blood pressure. If he decides to change to leftovers from home he may find that his problems go away, but at least go down. I will be continuing to not only monitor but also change to eliminate this dangerous food additive.

Hello Carol,
I am sorry to hear about your health problems and the possibility that it may be linked to MSG. I too have had adverse side MSG. If your husband must eat out, he can ask for the restaurant ingredient list. Many people including servers and cooks don't know the many names of MSG and believe they are telling the truth when they say their food is MSG free. Your husband can match their list against the list in this article to be sure.

Ahoy! I have suffered from MSG-related problems for years -- bloating, headaches, severe joint and muscle aches, weight gain, and high blood pressure, just to name a few. I know immediately when I have ingested MSG, because I start to ache all over and my stomach swells up like a balloon. After researching MSG on the Internet, I have started taking 500-mg Taurine tablets, available at GNC. I will keep you posted on how these work out. I am a female, almost 60 years old and in good health otherwise. Interestingly, MSG problems tend to occur with allergies to sulfites, which developed at the same time. Hopefully the Taurine will help with this as well, which almost sent me to the hospital a couple of years ago when my throat closed up after drinking white wine treated with sulfites.

Chris Bradfield, hello!

I have all the same symptoms that you speak of. They told me I have Fibromyalgia and maybe it is true. I would like to find out for sure though. Please let us know how you make out on the Taurine and thank you for taking time to post.

Hello Darlene and other readers -- I have now been taking the GNC Taurine tabs for about 3 weeks. They include a lot of cellulose as an inactive ingredient, which has the bonus of being a natural stomach filler when taken with water and thereby an appetite suppressant! I take just one of these tabs first thing in the morning, before I eat anything, and am finding they keep me from being hungry pretty much all day. My digestive system has improved immensely, my blood pressure is going down, I don't experience the bloating any more, and I believe I'm losing weight! I have a good friend with Fibromyalgia and I'll have to have her try these. I am experiencing problems with cold fingers, although it's winter here in Michigan and this is something I've had for years. It may be because my blood pressure is coming down and my BP medication may be too strong now. I'll keep you posted! Chris
